How to preserve your tomatoes and pepper sauce using jam bottles. Guest Post

Are you concerned that the only way you can preserve fruits, vegetables and tomato paste is only by refrigerating? Some people just want their vegetables fresh; I mean in our generation we preserve everything by adding preservatives that sometimes are not as healthy as we think. No wonder then that we battle with so many new diseases in our times.

At a women’s group meeting, we got talking about how women from our mother’s generation seem to be stronger than our own generation. By that we mean the number of children they gave birth to (a football team 😉 they worked outside their homes and still managed to run large households; plus they live longer.

In the opinion of many of the women present, our mothers fed their families with fresh vegetables and foods planted in their home gardens. Every time they want to prepare a meal all they had to do was pluck a few tomatoes, carrot, and cucumber and so on and a sumptuous meal is set. Interestingly this helped saved some of the resources which were used to provide for other needs of the family.

So how do we manage our homes and resources as women? Not so long ago the cost of tomatoes skyrocketed and the supply of electricity became a once in three week’s activity (in my country, Nigeria). In the absence of a refrigerator, here is what I learned about keeping your tomatoes and pepper paste fresh with no additives.

• Buy the amount of tomatoes, pepper and Tatashe you want; blend to your taste then boil until it is no more watery and it forms a thick paste.
• Get small and big sizes of your empty jam jars…fill each with your tomatoes and pepper paste still steaming hot; cork or close lid tightly.
• Next, get a big pot and arrange your jar bottles in it, then pour some water but not to the brim. Place the pot with your jam bottles containing your paste on a stove; allow boiling for ten minutes.
• Switch off the gas, ensure again that the lids of your containers are tightly corked then arrange them on an airy place on your shelves.
The freshness of your blended tomatoes and pepper paste would last for three months.

Note:
• For each jar of tomatoes that you pick to cook, finish using the contents once the lid has been opened.
• Pay attention to seasons of the year that tomatoes and pepper become expensive and prepare ahead by buying in bulk and preserve using the above method.

Fresh foods are healthier and safer. Have a backyard/home garden.

Quick glossary: 

Tatashe is a red species of Capiscum/Pepper that’s native to Nigeria. It’s not the same as Bell Peppers and used for its flavour and rich colour given to stews and other West African dishes.

What are we doing? Stream of consciousness Saturday.

Concentrated emotions tend to erupt one way or the other when the proper channels of expressing and addressing these issues are not being explored and the end results are not always pretty.SoCS badge 2015

A lot of social issues that we are currently battling are the build-up of so much hurting and unresolved issues that society has been sweeping under its huge carpet that it keeps mounting until there’s hardly any more space to squeeze in more rubbish and with the aid of our new improved social mediums to stir the hornet’s nest,  ‘Kaboom’ the combustion is let loose and we are left bewildered, hurt and in pain.

We truly can’t continue the way we are going. Holding in oppressive feelings, ignoring and suppressing them, violence or hiding heads in the sand has never resolved any problems; channels of dialoguing should be opened up to deal with concentrated issues of the past and present.

I remember when I was reading stories about Auschwitz gas chamber, the concentration camps and watching escape from Sobibor, I couldn’t stop crying for days. It was a hard read!
I just couldn’t fathom that amount of deep-seated wickedness and concentrated effort to annihilate others just because they don’t fit into a certain category of someone’s description. People were profiled and marked out for destruction.

If we look into history, the depth of man’s inhumanity to fellow man in these concentration camps, on slave ships, plantations, and so on, is despicable and you would think that we learn, however, the sad news is that we simply haven’t learnt from history or maybe some choose to ignore history and write their own.

It seems that we haven’t learnt that racial profiling only builds hurt and harm. We forget so quickly and if things are not properly handled they will certainly spiral off the hook.

I’m very much attuned to what happens around me and the society at large, so in as much as I may not be in the vicinity of an incident, history has also shown that a war can be triggered in one place and its effects ricochets everywhere and for several weeks these disheartening news have pierced my skin and derailed my concentration on my writing.

I sincerely hope that people begin to think clearly and understand better and that we get a grip of these turmoils sooner than later.

I believe that the indomitable spirit of humanity to hunger for greater good and peace will prevail.

Enslaved – Friday Fiction in Five Sentences.

She lay still on the mat, her body curled in a fetal position as she listened to his grunts and snoring whilst he slept in replete satisfaction.

Reeba heard every minutiae sound that echoed in the night camp as she suffered through another sleepless night of so many terrifying nights; daylight could never come fast enough.

A deep chasm of hopelessness dug a bottomless pit inside her, alongside her perpetual hunger for food.

For how long? For how long would she have to live? Will she get out of this alive? Sometimes death seemed a preferable option.

She wondered what became of her family; did they survive the attack or were they captured and enslaved as well?

Porch Ministry: Michelle’s beautiful story took me back to the day’s of sitting in front of my parent’s verandah and shredding corn while listening to my mother or grandmother entertain us with stories. A lot of life went on in front of that verandah, a lot of tradition handed down and beautiful memories made. These days, people hide away inside, behind their doors, they don’t even know who their neighbours are anymore – because they can’t be bothered. It’s a sad shame!

Piercing the darkness…

Clouds of darkness
hang heavily over the land
its weight keeps the dwellers down
and blinds their vision,
causing them to stumble, to fall
and to lose their way.

Echos Of My Neighbourhood

Photo Workshop and bits of my week – Echoes Of My Neighbourhood 26

On Thursday’s, I share pictures about ‘Echos of my Neighbourhood.

I would like to invite you to participate. The challenge is quite simple and you can find out more about it through this link.

This week has truly been a bit rough on my emotions, but work and attending a three-day digital photography workshop helped to take my mind a bit off things.

I am working at honing my photography skills and see where this road leads. It was a lot of fun that by the time I got home each day, I was numb enough not to think too much about all the ugly incidents going on all over the place.

I met some delightful people and interacted with one of the attendees, a beautiful Turkish lady. My heart felt so sad for her when her eyes brimmed over with tears as she talked about the bombing at ATATURK. She was scheduled to travel home to Turkey this week and her thoughts were filled with trepidation which was quite understandable.

As we sat in our armchairs and zoomed through our timeless portals, Stella took us to Aalborg zoo in Denmark to see some Wildlife, then Lady Lee gave us a treat to Welsh music and sailing down the picturesque Lake Vyrnwy in Wales after which Pamela took us through a 45-minute jaunt through St. Augustine’s beautiful sunrise and tall swaying palms and our travel through the e-portal was capped with eye candies of beautiful vintage cars displayed at a street fair in Brooklyn.

So, when do we get to visit you? Now, don’t be shy and invite us over 😉
