My Yummy Chicken Mango Salad – A Click A Day.

picsart_09-09-06-56-011

This is mango season and the delicious fruit abounds in the fruit stalls right now.

Taking advantage of its sweetness asides from juicing them and making smoothies, they can be used in fresh salads as well.

I made this platter yesterday evening and you have to take my word for it that it’s yummy and of course, you are welcome to give it a try 🙂

Quick Recipe

2 Tablespoons of Olive Oil

1 lemon, juiced

1/4 flat leaf parsley leaves, chopped

1 long red chilli, deseeded and chopped (optional)

1/2 of a tomato, deseeded and chopped (optional)

1 stick of cucumber (optional)

2 – 3 cups of chopped roasted chicken – remove the skin

2 mangoes, peeled cubed or sliced into small bits

150g of mixed salad greens

Preparation Steps:

  1. Combine the Olive oil with the lemon juice and add the parsley and chilli if you are using chilli.
  2. Combine the chicken, mango, salad greens, tomato (optional), and cucumber (optional) in a large bowl. Drizzle your dressing, toss lightly to mix and serve.
  3. Enjoy 😉

Rononvan's Weekly Haiku Challenge

Yay! Soon it will be beach time – Ronovan writes weekly haiku challenge

Well, I must say that Ronovan’s prompt ‘beach & time,’ anticipates some good time in the near future with me. The weather over here has been sweltering, hopefully, we should see a turn to cooler climes in a few weeks.

Soon the weather will be cooler here
then we get to indulge,
and spend some time at the beach.

Book, beach bag, towels, ball, sunglasses & all,
we frolick in the sand
and it’s always a time well spent.

Saw this lovely feet patterns made on the sand during my evening walk, but alas, I didn’t see the birdie that owned the steps. I guess she took her walk earlier 🙂

Rononvan's Weekly Haiku Challenge

Riverstone…Ronovan writes haiku weekly challenge

For some reason, the pair of words ‘River & Stone’ that Ronovan gave us for this weeks’ haiku brings thoughts of possibilities to my mind.

One of my sitting spot at the mall that’s close to my house. I gather my thoughts even with the buzz of people and their voices, slowly sip my coffee and watch people shamelessly 😉

Do you have a spot?

A Click A Day

Mr. Pencil – A click a day.

PicsArt_08-27-11.02.13[1]

Running around to purchase the last minute school items for the children, Mr Pencil captured below reminds me of how many pencils I have to purchase in a given term because the children somehow manage to misplace them often enough.

It makes sense to buy bulk purchase school supplies so that I don’t go out of my mind at the odd moment requests of ‘mommy I can’t find my pencil or pen, eraser or sharpener.’

Below are few tips that can help to ease into a new school year.

  1. Do a health check for your child/children
  2. Stock up on back to school supplies.
  3. Stock up on lunch/snack items.
  4. Ease back into a bedtime routine and invest in an alarm clock if necessary.
  5. Have a pep talk to motivate them and gauge their emotions.
  6. If they are joining a new school, anticipate the challenges that come with change and give them as much assurance as possible.
  7. Set new school year priorities for them.
  8. Plan for an engaging after-school activity for them.
  9. Pray for your children.

So are you ready yet?

Everyday People

Trying to make a sale – Every day beautiful people

Trades_woman[1]

My conversation with the tradeswomen below:

“We take small items from the wholesaler on credit to sell. We only earn commissions and maybe extras from the profit of the original amount. Some days sales are poor, but it’s better than doing nothing.”

“It’s difficult to make savings from this, but I hope one day to save enough to have my own small kiosk.”

I ended up buying a whistle 🙂

I have found that once you approach people decently and engage in a conversation, within split seconds, you learn not only a bit more about them, but these little conversations make me pause and be thankful. They make me smile, laugh or sober.

Soap_suds[1]

After washing my daughters’ hair with the new shampoo that I just bought, the fruity fragrance clung in the air and the soap suds were pale aquamarine colour. Since I was searching for my Mundane Monday shot, I decided to take a quick snap. Unfortunately, I couldn’t capture the fragrance 🙂

Ambition – Everyday beautiful people 96

“There is no force equal to a woman determined to rise.” W.E.B. Dubois

Ambition[1]

“I would like to be an architect,” she told me in her soft melodious voice and I listened.

“I am starting my course at the University this September and I am so glad.”

‘You see, I am from Yemen and it’s not easy for us as women. There’s a lot of gender disparity,’ she continued in her lilting tone

I could see the shining ambition in her eyes and the beautiful smile on her clear pretty face and I felt such pleasure just knowing that she’s getting the opportunity to pursue her passion and ambition.

The saying that when you raise and train a woman, you raise a village, a town, a nation came to my mind.
